Chewy Low Carb Brownies

Ingredients:

  • 1 1/4 cups almond flour
  • 3 Tbsp cocoa powder
  • 1 1/2 tsp baking powder
  • 6 Tbsp butter
  • 1 oz 100% cocoa baking chocolate
  • 1/2 Tbsp real vanilla extract
  • 1/2 Tbsp strong brewed coffee
  • 1/2 cup + 1 Tbsp erythritol (or Swerve)
  • 1/2 cup + 1 Tbsp Splenda powder
  • 6 egg yolks
  • 3 oz sugar-free chocolate chips (or the darkest chocolate chips you can find)


Directions:

In a microwave-safe bowl, melt the butter and the baker's chocolate together. Add vanilla and coffee. In a large mixing bowl, stir together all the dry ingredients. Add egg yolks and stir. Then slowly add melted butter and chocolate. Lastly, add chocolate chips. Press in to a 8x8 pan. Bake at 350ยบ until a toothpick inserted in to the center comes out clean (approx 15 minutes)

These taste good warm, but are even better the next day when they have cooled.
