Easy No-Bake Cheesecake
Need a quick dessert for a pot luck or a keto dessert for your kids? This quick and easy cheesecake recipe lets you put together a dessert with very little fuss... and you don't even have to turn on the oven!
Easy No-Bake Cheesecake
Ingredients:
In a small bowl, pour the boiling water over the gelatin and stir until all lumps are dissolved. Heat the cream until warm but not boiling and add that to the water and gelatin. Whip cream cheese in a stand mixer or in a large bowl with electric beater. Add the gelatin mix and remaining ingredients to the cream cheese. In a pie pan or 9"x9" square pan, spread evenly over a layer of chopped nuts or an almond or pecan meal crust. Top with your favorite dark chocolate or low carb chocolate like Lily's brand. Add a keto caramel drizzle and sprinkle with nuts if desired. This would also be good topped with sliced berries. Chill in the fridge until set.

- 1 packet of gelatin
- 1 tsp vanilla
- 1/4 tsp of lemon juice
- 1/2 cup of Swerve (or other low carb sweetener to taste)
