Cream Cheese Pound Cake

Ingredients:
  • 1 lb cream cheese
  • 1 cup almond flour
  • 1/2 cup powdered Splenda
  • 1/2 cup Swerve sweetener
  • 1/2 cup coconut flour
  • 6 eggs
  • 1 Tbsp lime juice (bottled or fresh)
  • 1 tsp vanilla extract
  • 1/2 tsp orange extract
  • 1/2 tsp lemon extract 
  • 1 tsp baking powder
Directions:

Combine all dry ingredients. In a separate bowl, whip cream cheese with a hand mixer. Add lime juice, extracts and vanilla. Add one egg at a time to the cream cheese mix, being sure to incorporate each egg before adding another. Once all the eggs are mixed in, add dry ingredient. Bake in a greased loaf pan for 30-45 minutes at 350ยบ. Since oven temperatures vary, times may be different. Test for doneness by inserting a toothpick in to the pound cake. The pound cake is finished when it comes out clean. 

Allow to cool. Serve with low carb ice cream, whipped cream and berries.
